How to make Liberian Potato greens

    Potato green as the name implies is made from the leaves of sweet potato, and a dish popular in West Africa especially in the country Liberia.

    In some African nations such as Sierra, Mali, Liberia, and more, people consider these leaves a vegetable and transform them into various tasty dishes. You can add any meat as the protein to this meal. This sauce is normally served with rice to help you feel full longer. Although fresh potato leaves are quite common, people can dry them to prolong their shelf life. Below is a recipe for making potato green;

    Ingredients

    • 1 bunch of fresh Potatoes leaves (chopped)
    • 3 Habanero pepper (chopped)
    • 2 cups of water
    • 1 small green bell pepper (chopped)
    • Chicken breast cut into bite pieces
    • 1 small onion (chopped)
    • 1/2 cup of red palm oil
    • 2 tablespoon of seasoning
    • Salt to taste

     Procedure

    1. Wash the chopped potato leaves thoroughly.
    2. In a deep pot, Combine onion and meats then sauté in vegetable oil until they are almost fully cooked. Remove from pot after 15 minutes.
    3. Put the washed chopped greens into the pot in the remaining oil and fry until greens become tender, stirring frequently.
    4. Combine all ingredients into the pot, season and add enough water to just slightly cover all of the ingredients.
    5. Season to taste with seasoned salt, onion powder, chicken bullion cubes
    6. Cook over medium heat until all water is absorbed, stirring frequently.
    7. Remove from heat and serve
