  • 1 whole chicken
  • 1 big onion
  • 3 ripe tomatoes
  • 3 cloves of garlic
  • 1 bay leaf
  • 1 lemon
  • 6 tablespoons of palm oil
  • 3 zucchinis
  • 3 eggplants
  • 100 grams of okra
  • salt to taste
  • chilli pepper
  • 250 grams of corn flour

How to prepare Muamba de galinha

  1. The chicken must be well washed thoroouglly, cut it into pieces and season with salt. In a pan, heat the peeled and chopped onions and garlic, the bay leaf, the tomatoes cleaned of seeds and chopped, the oil, the lemon juice and the chili pepper.
  2. Boil over moderate heat and stir the pan from time to time.
  3. Eggplants and zucchinis must be peeled and cut into small pieces. when the chicken starts to get tender, gently shake the pan and let it cook.
  4. Add the cleaned and cut okra when almost cooked, ,
  5. Thicken with a little corn flour dissolved in water and let it settle.
  6. Separately, bring 1 liter of water to a boil without salt and bring to a boil.
