    Chipsi mayai also known as Zege is a popular protein packed East African street food, found mostly in the country Tanzania.

    It is a simple potato-egg omelette in which the name “Chipsi Mayai” is derived by combining two words; chipsi which is the Swahili name for French fries or chips which is combined with other flavourful ingridients, and then made an omelette. But instead of preparing a plain omelette, you add a twist by making French fries and converting them into an omelette. You can also include onions, bell peppers, mushrooms, and other ingredients as per your preference. 

    Chipsi Mayai is an easy recipe to make at home. The ingredients are simple and easily available in any store. Chipsi Mayai has a few steps, but they are quick, so you can undoubtedly prepare it within minutes. Here is a way of preparing Chipsi mayai;

    Ingredients Required

    • 4 large eggs
    • 5 Irish Potatoes
    • 1 Fresh Tomatoes (optional)
    • Vegetable oil
    • 1 medium size onion
    • 1 small garlic
    • Fresh Coriander
    • Pepper Powder
    • 1 teaspoon of chilli powder
    • 1 teaspoon of green chillis
    • 1 green pepper
    • 1 pinch of Salt

    Steps Required

    1. Wash and chop your onion, tomato, green pepper and garlic. On the side wash your irish potatoes also but it shhold be sliced in medium shape.
    2. Heat your vegetable oil in a pan
    3. Add the sliced potatoes into the hot oil. Fry until they are golden brown in color.
    4. Remove the fries from the oil and set them aside on a paper towel-lined plate.
    5. In the same pan, crack the eggs and leave to cook for 30 seconds.
    6. While cooking add the chopped onions, green pepper, garlic, and tomatoes if using.
    7. Once the eggs are cooked, add the fries back in and fold them into the eggs.
    8. Season with salt, chilli powder, coriander, and give it a final stir.
    9. Serve Chipsi Mayai hot.
