As the holiday is approaching, Nigerian fried rice, one of the most popular cooked meals, should not be missing from your holiday food menu.
Although originated from China since as early as the Sui Dynasty (589–618 CE), Fried rice can be seen eaten in all parts of the world, especially in Nigeria where it is said to have a unique way of preparing this dish.
It is one dish that is loved by almost everyone in the country and a big party favorite and a delicacies in any festive gathering. The Fried rice is normally prepared by stir-frying seasoned precooked rice with a mixture of vegetables and cooked proteins(meat/chicken or prawns).
Below is the recipe for preparing Nigeria Fried rice
Ingredients
- 2 cups of white rice
- 500ml Chicken or Turkey stock
- 2 large Carrots
- Chopped Cow Liver/beef
- 1 handful Green Peas or Runner Beans
- 3 Onion bulb
- 2-3 tablespoonful Curry Powder
- 1 large Green bell pepper
- 2- 3 Cooking spoonful Vegetable Oil
- 1 teaspoonful Garlic Powder
- ½ tablespoonful Black or white pepper (optional)
- 2 Seasoning cubes
- Salt to taste
Procedure in Preparing Fried rice
- Parboil the rice then place in a sieve to drain out excess water.It prevents the grains to clump together when cooking.
- Wash and cut all the vegetables such as carrot, green peas, ball pepper, onion bulbs and as many vegetables you choose to add.
- Place the reserved chicken stock into a large pot and as the stock begins to boil, add the parboiled rice, seasoning cubes, curry powder, garlic powder, onions and salt to taste.
- On the side heat the vegetable oil in a pan and add the carrots, peas, green bell pepper and diced liver/meat, then add a little white/black pepper, garlic, curry and seasoning cube to taste. stir fry for 1 min and pour into a bowl.
- Pour a portion of the stir-fried mix into the steaming rice and mix properly, distribute the stir fried vegetable mix well till it is evenly distributed and then leave to simmer for 3 minutes.
The Nigerian Fried rice is Ready to be served with any chicken or beef of your choice.
