How to make Tuwo Shinkafa

    Tuwo shinkafa is a Northern Nigeria meal made from overly cooked rice which it is then Pressed and made as a swallowed.

    Tuwo is a word derived from Hausa which means stiff porridge or swallow. It comes in different types, depending on the ingredient used in making this swallow. Examples are tuwo masara made from corn, tuwo dawa made from guinea corn and tuwo alkama made from wheat.

    It is cooked with more water from normal rice cooking style, and then using long-handled wooden spoon to flatten rice and knead it. This delicious swallow is commonly served with bean soup but any traditional soup can as well be served with it.

    Here is the receipe for cooking Tuwo Shinkafa;

    Ingredients

    • 1/2 kg of rice
    • 1.5 liters of Water
    • Oil (optional)
    • Salt (optional)

    Procedure

    • Clean and wash rice to keep it safe and clean at a moment.
    • Boil up water of about 1.5 liters.
    • Add salt and oil, let it boil for 2 minutes with water. This step can be skipped if it is not part of your ingredients.
    • Add in rice, leave it to boil for 10 minutes until ready and water dries.
    • Taste to see that rice is really sticky and well cooked.
    • Using long-handed wooden spoon, knead the rice until tender.
    • Leave it on heat for 3 minutes more.
    • Mold the mix in small batches Using another spoon, take some bunches and form round shaped balls and put into a plate.
    • Do the same until all rice is in balls.
