How to prepare Chambo a Malawi dish

Malawi’s dish chambo is a type of fish that is the most popular and best-known fish found in Lake Malawi.

This freshwater fish is in the Tilapia family and an easy fish to find to make a delicious chambo dish. The fish is normally fried and then cooked in sort of a gravy. Its recipe contains majorly of two ingredients that need to be made ahead of time.  One is a curry spice blend and the other is a fruit chutney.

it is a very rich meal which is rich in protein as fish is one major ingredient in this dish. Chambo is sometimes dried in the sun, roasted, cooked, or fried, and served with a side of soup.

Ingredients

1 medium fish (chambo)

2 tbsp oil

1 onion, sliced

4 tomatoes, chopped

1 tbsp tomato paste

1 small green capsicum, finely sliced

1 cup water

seasoning cubes

salt to taste

Steps to take in preparing Chambo

Step 1; wash and fillets (skin on) fish(chambo) and it should be sliced into 10 cm portions

Step 2;Heat the oil on medium in a large pot.

Step 3; Add onion into the heated oil and fry till it’s soft.

Step 4; Add the tomatoes, tomato paste and cup of water then stir well till it is evenly distributed.

Step 5; Turn down the heat and simmer for about 10 minutes until slightly reduced and saucy.

Step 6; Add the green capsicum, stir and cook for three minutes.

Step 7; Season with salt and seaseonig cube to taste.

Step 8; Add the fish pieces to the pan and simmer for five minutes or until the fish is cooked through.

Chambo is not complete without ndiwo, a tasty meal made of pumpkin or cassava leaves, tomatoes, and groundnut powder. usually enjoyed with family and friends.
