Puff-puff is a fluffy delicious deep-fried Nigerian snack that can be comfortable consumed anywhere. It’s similar to the Nigerian buns but a lot lighter and fluffy.
Ingredients
3 cups of flour
2 cups of warm water
2 teaspoons active dry yeast
1/2- 3/4 cup sugar
Nutmeg
1/2 Teaspoon of salt
Vegetable/Groundnut Oil for deep frying
Method
Mix salt, sugar, nutmeg, water, and yeast in a bowl and set aside for about 5 to 7 minutes. Then add the flour and mix together.
Cover the mixture with a clean thin towel, keep in a cool place and let it rise for about 1 to 2 hours.
Pour vegetable or groundnut oil into a large deep saucepan, and place on low heat, ensure oil is deep enough to cover the puff-puff dough when frying.
Test to make sure the oil is hot enough by putting a tiny bit of batter into the oil. If the oil is not hot enough, the batter will sink to the bottom of the pot instead of rising to the top.
Take a little bit of the batter (make sure your hands are very clean) and drop into the hot oil. Fry till golden brown, making sure that all the sides are fried.
Remove your fried puff-puff and put on a clean napkin in a tray to rest for about a minute. Repeat frying process with the remaining batter. Sprinkle some powdered sugar if you want a sweeter puff-puff.
Your fluffy puff-puff is ready for munching.
