You will enjoy this great Ethiopian dish either raw or semi-cooked. Kitfo is like a hamburger, only it’s raw, filled with spices, and eaten with injera instead of with a bun.

    Ingredients

    • Beef filet
    • Anchovy paste
    • Seasonings
    • Garlic
    • Canyen pepper
    • Clarified butter
    • Salt to taste

    Easy steps in this Kitfo

    1. Make sure to wash and trim all the silver skin and fat off the fillet and cut the fillet into large chunks. Place in the food processor that is set out as a large high-powered food processor.
    2. Add the cayenne, salt, anchovy paste, garlic powder, and cardamom. Pulse to chop the fillet into fine chunks. You can choose to stop when the beef resembles ¼ inch chunks, or chop smaller into ground steak.
    3. Once the texture is to your liking, melt the clarified butter and pour over the top. Mix the butter in by hand, do not pulse.

If you want it cooked not to worry, simply sear in a skillet on medium-high heat for 1 to 2 minutes and it will be at the right texture and flavour for you.
