Recipe for Oshigali

    Oshigali is an African meal found in Namibia, which is a rich puree made from peeled white beans, and is usually eaten in the Oshiwambo and Okavango cultures.

    This meal is made by first soaking white beans in water for around an hour. Once moistened, the beans are squeezed out of their peels and placed in a pot. The beans are then cooked over an open fire or in a pressure cooker until mushy, turning into a puree. Some Namibians add salt and paprika to enhance the taste. It has a rich creamy texture which is flavourful. There are various ways of making oshigali but below is an easy way and less time consuming;

    Ingredients

    • 2 cups of White beans
    • Warm water
    • 1/2 table spoon of grounded pepper
    • Vegetable oil (optional)
    • 1 ½ of salt

    Procedure

    Steps in washing the beans

    • Pick your beans by removing any foreign object like rock etc. and put them into a clean bowl
    • Pour the water into the beans immediately all the other left over foreign object will form up at the top remove them and the not so good quality beans also form up at the top and remove them
    • Wait for 3-5 min for the beans to sock and using your hand rub through the beans removing the peels. But doing so you also start removing the peel from the bowl, this process also require you to keep removing and adding new water until the beans are well cleaned.

    Steps in making oshigali

    • Pour in 1 litre of water into a pot, then add 1 ½ spoon of Salt
    • Add 4 spoon of cooking oil and pepper
    • Put in your cleaned beans into the boiling water, then Cook for 45-60 minutes
    • Avoid to stir the pot on the first 30 min to prevent the burn under
    • Once soft and well-cooked mash the bean together using a wooden spoon. To serve Optimal
    • Add Marula oil ( Ondjove) and enjoy
