Ripe Plantain Roll-up Recipe

Just like the moi-moi roll-up, the ripe plantain roll-up is a delicious and savory Nigerian breakfast staple made from pureed beans. It is easy to make and not time consuming.

Ingredients

3 sizable fingers of ripe plantain

2 medium sized onions

Some fruits of red pepper (tatashe)

Small ginger (peeled)

1 spring green onion (optional)

2 eggs (1boiled and 1raw)

1 table spoon vegetable oil or butter

Half teaspoon of pepper flakes

Half cup of crayfish

Maggi (to taste)

Salt (to taste)

Procedures

Peel your plantain and cut into smaller pieces. Pour the cut plantain into the blender, add 1 onion, some fresh pepper, 1/2 cup water and ginger and puree to a fine paste in a blender and blend.

SOME INGREDIENTS FOR RIPE PLANTAIN ROLL-UP

Chop the remaining fresh pepper and onion. Slice the boiled egg to preferred sizes and mince the green onion (if using).

Melt butter. Add maggi and salt to taste, a little grounded crayfish, pepper flakes stir till everything mixes evenly. Add in pureed beans and raw egg. Mix well for 3-5mins using a hand mixer.

Line an oven tray with culinary parchment (or aluminum foil). Pour in the moimoi batter and spread out evenly. Shake pan gently to distribute, you can now add the chopped ingredients.

Bake plantain for 15 minutes (until lifted at the edges and set).

As soon as you remove the plantain from the oven, roll it up. Starting at one short end, peel off parchment until rolled to the end.
