Mala mogodu is a dish that is considered a delicacy in South Africa and it is made from stewed tripe (mala) and stomach lining (mogodu)
The mogodu (stomach lining) can come from any ruminant animal you chose to prepare like cow, goat, chicken, duck, sheep, deer or even antelope.
This wonderful, rich and flavourful meal contains some mineral such as vitamin B12, choline, zinc and selenium. There is hardly any fat content in mala mogodu as it is made up of stomach lining of an animal and not the muscle. Mala mogodu usually take some time when preparing and it is prepared by boiling or stewing to help reduce the toughness of the meat.This meal is sometimes enriched with the addition of hot green and red chili peppers, depending on personal preferences for spicy food. and it’s usually served lightly curried and accompanied by pap, dumplings, fried onions, or new potatoes.
